The Hymnal.... see Suggestions of Hymns that Work Well For Musical Numbers
The Primary Songbook: Take a deeper look... there are lots of beautiful songs that would make great musical numbers for a choir. Try "He Sent His Son," "Beautiful Savior," "I'm Trying to Be Like Jesus," "How Will They Know," "Love is Spoken Here" or "A Child's Prayer." If the Mormon Tabernacle Choir can get away with it, so can you.
